Ingredients

6 medium eggs

1 tsp baking powder

¼ tsp of Truvia sweetener

A pinch of salt

50g of coconut flour

Tbs coconut oil or butter (to grease the tin)

35g Almond flakes (optional)

35g Chia seeds (optional)

Method

Pre-heat the oven to 200 C / gas mark 6.

Break the eggs carefully, separating the egg whites from the yolks. Whisk the egg whites in a medium sized bowl for approximately 3 minutes. Add the baking powder and whisk for another 6 minutes. 

Next add sweetener, salt, yolks and coconut flour to the the bowl and mix the ingredients using a hand-held whisk.

Grease the bread tin using the coconut oil and pour in the mixture. If you are adding almond flakes and chia seeds, sprinkle them on top now.

Cook in the over for 30 minutes. Test whether the bread is cooked but inserting a knife into the middle. If the knife is dry, the bread is cooked enough.
